Asian Pear Salad

I never knew asian pears till my husband introduced it to me. There's a lot of those in here and they sell it for cheap in the local market, so I am sure going to try this salad.

Serve this elegant and healthy main course for Valentine's Day--or on any other day you choose. The salad features a delightful pomegranate-mustard dressing and helps you on your way to getting your daily value of nutrients.

This sublime salad makes for an elegant main course. It features fresh fruit, greens and herb-crusted chicken breast, topped with a delightful pomegranate-mustard dressing.

Asian Pear, Spinach and Golden Raisin Salad With Herb-Crusted Chicken Breast

Ingredients

Pomegranate-Mustard Dressing
½ cup pomegranate juice
1 tablespoon honey
2 tablespoons Dijon mustard
1 tablespoon finely chopped shallot
Sea salt, to taste
Fresh ground black pepper, to taste
2 tablespoons canola oil

Salad
2 fresh ripe Asian pears, peeled and thinly sliced
4 cups (8 ounces) baby spinach leaves
½ cup California golden raisins

Herb-Crusted Chicken
6 boneless skinless chicken breasts (4 ounces each)
Sea salt, to taste
Fresh ground black pepper, to taste
½ cup chopped fresh Italian parsley
¼ cup finely chopped fresh mint
¼ cup chopped fresh chives
¼ cup chopped fresh dill weed
1 tablespoon olive oil

Toppings
½ cup fresh pomegranate seeds
½ cup finely slivered fresh mint
Fresh chopped chives


Directions

1. Make the pomegranate-mustard dressing: Measure pomegranate juice into saucepan. Heat and simmer over medium-high heat until reduced to about ½ cup. Cool completely. Then, pour the pomegranate juice, honey, mustard, shallot, salt and pepper into a blender. Pulse to mix well. With blender running, add oil in a slow steady stream. Set aside.

2. Prepare salad: Combine pears, spinach and raisins in a large mixing bowl. Add ¼ cup dressing. Mix together and season to taste with salt and pepper. Cover and set aside to chill.

3. Season chicken breasts well on both sides with salt and pepper. Combine herbs in small bowl; mix well. Press liberal amount of herbs onto both sides of breasts. Heat oil in nonstick skillet over medium-high heat and sauté chicken about 4 minutes on both sides, until done (when the internal temperature reaches 170 degrees F).

4. Arrange salad on large individual serving plates. Thinly slice chicken breasts and arrange on top. Drizzle with dressing and top with pomegranate seeds, mint and chives.

  2. Hi rose, asian pear here is expensive. I don't know maybe because the store bought this type of fruit somewhere else and not here. But I like it very much because it is juicy and huge. Thanks for sharing the recipe. Love it!!

  5. salamat manang sa award...I will keep it...hehhehe! Uy...kahit san ako pupunta..kainin ang naabutan ko...sarap naman nito...mahilig ka talaga sa mga ganitong recipe...hehhe..d ako masyadong mahilig sa chicken..si goryo lang...gusto ko baka...ikaw naman yung ayaw ng baka...haha..kakaloka!
